Brunswick Stew Recipe
Brunswick Stew is a traditional dish from the southeastern United States. This crock pot recipe version uses chicken as the base meat with some cubed ham for variety. The recipe can also be made with pork or beef.
What You Need:
1 whole chicken, cut up or 3 lbs chicken pieces with skin removed
2 cups chicken broth
1 large onion, chopped
2 cups cooked ham; cubed
3 potatoes, diced
2 cans diced tomatoes; 16 oz ea.
10 oz lima beans
10 oz corn; whole kernel
2 tsp salt
1 tsp sugar
1/4 tsp pepper
How To Make It:
In a 6 qt. crock pot combine chicken with broth, onion, ham, amd potatoes.
Cover and cook on LOW for 4 to 5 hours or until chicken is done.
Lift chicken out of pot and remove meat from the bones, then return chicken meat to pot.
Add diced tomatoes, beans, corn, salt, sugar and pepper.
Cover and cook on HIGH 1 hour.
