Crock Pot Chicken Cacciatore
This chicken cacciatore recipe is a little more involved than most crock pot recipes, but it is well worth the effort.
What You Need
1 whole chicken cut into pieces
1/4 cup olive oil
1 cup flour
1 cup chopped onions
1 cup sliced mushrooms
1 cup julienned carrot
1 cup julienned green pepper
2 Tbsp minced garlic
8 cups chopped, peeled tomatoes
1/2 cup tomato paste
3/4 cup red or Marsala wine
1 tsp oregano
1 tsp basil
1 1/2 tsp salt
1 tsp pepper
freshly grated Romano cheese
How To Make It
Wash and drain the chicken pieces well.
Heat the oil in a deep skillet on your stove top.
Dredge chicken pieces in the flour and brown each piece on all sides to a golden brown.
Transfer the chicken to paper towels to drain of any excess oil.
Saute the onion, mushrooms, carrots, green peppers, and garlic in the same skillet.
Add the tomatoes and saute for another 5 minutes.
Place chicken pieces in a 6 qt. crock pot.
Pour sauted ingredients over chicken in the crock pot.
Stir in the tomato paste, wine, herbs, salt and pepper.
Cover and cook on low heat for 6 hours.
Adjust the salt and pepper to your taste.
Serve with your favorite pasta, some freshly grated Romano cheese and a nice warm loaf of Italian bread.
Tips:
The longer this recipe simmers in the crock pot, the better it tastes.
