Low-Fat Chicken Stew
This is a very easy to make chicken stew recipe for your crock pot. Low-fat, low-sodium ingredients help to make this meal healthy without sacrificing too much flavor.
What You Need
2 lb skinless boneless chicken breasts cut into 1″ cubes
1 tbsp cooking oil
2 c fat-free, low-sodium chicken broth
3 c potatoes, peeled and cubed
1 c onion, chopped
1 c celery, sliced
1 c carrots, thinly sliced
1 ts paprika
1/2 tsp pepper
1/2 tsp rubbed sage
1/2 tsp dried thyme
6 oz low-sodium tomato paste
1/4 c cold water
3 tbsp cornstarch
How To Make It
Brown chicken cubes in a skillet with the cooking oil, drain, and pat dry with paper towel.
In a medium sized crock pot, combine the chicken cubes and all other ingredients except water and cornstarch.
Cover and cook on HIGH for 4 hours.
Mix water and cornstarch until smooth and stir into stew.
Cook, covered, 30 minutes more or until the vegetables are tender.
