Zucchini Bread Recipe
What You Need:
2 eggs
2/3 cup vegetable oil
1 1/4 cup sugar
1 1/3 cup zucchini, peeled and grated
2 tsp vanilla
2 cup flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 to 1 cup chopped nuts (your favorite)
How To Make It:
With a mixer, beat the 2 eggs until light and foamy.
Add oil, sugar, grated zucchini and vanilla and mix well.
Combine the dry ingredients with the nuts add to the zucchini mixture. Mix well.
Pour into greased and floured 2 quart mold and place in a large crock pot.
Cover the top of the mold with several layers of paper towels.
Cover the crock pot and bake on high 3 to 4 hours.
Do not remove the crock pot cover to check until the last hour of baking.
Let stand 5 minutes before unmolding.
Tips:
In a pinch, a 2 pound coffee can will do as a substitute for the baking mold.
